Chicken, lemon and olive tagine

This is so easy and really tasty. The ingredients are easy to find as well. Serves 4

Ingredients:
2 medium onions, sliced
4-5 cloves of garlic finely chopped
2-3 medium carrots, chopped roughly
2 lemons, cut into quarters
4 chicken legs
1 small packet of green olives with seeds
2 tablespoons cooking oil
1 tablespoon mixed spice
1 tablespoon of cumin powder
1 tin of tomatoes or half a box of passata
1 litre of chicken stock
Salt and pepper

Method:
1. Heat the oil in a large heavy based pan and fry the garlic and onions lightly.
2. Add the carrots and spices until the flavours are released
3. Add the chicken with plenty of seasoning and fry for 1-2 minutes
4. Add all of the rest of the ingredients. Bring to a boil and simmer for about 1 hour or until the flavours have infused and the chicken is soft and falling off the bone.
5. Serve with rice, couscous or potatoes

It is so easy and you can leave everything in one big pot without any fuss!
